The Fourth World Pesto Championship in mortar, which we have already reported at the time of the opening of registration for the qualifying rounds, is finally upon us. The league wants to present the true essence of Genoa pesto, using the ingredients of the original recipe as well as the historic mode of preparation, with the mortar. This way is the only one that guarantees that the basil will remain unchanged, both as a color as a flavoring.
The championship will be held March 17, 2012 in the splendid setting of Palazzo Ducale in Genoa hosting the 100 finalists, winners of the preliminaries held in Italy and worldwide.
The event will begin at 9:00 and in the afternoon will be declared the winner after several rounds which will reduce the “survivors”. The jury will consist of 30 people of experts, while competitors are a diverse representation of countries and professions. Every competitor will use same for all ingredients and will follow the traditional recipe for pesto sauce; The difference will be the ability of the competitor.
